Salted Caramel Apple Blondies

These blondies are loaded with warm cinnamon, juicy apple chunks. They’re a cozy dessert for crisp fall nights and pair beautifully with coffee or cider.

Ingredients:

1 cup unsalted butter, melted and slightly cooled

1 ½ cups light brown sugar, packed

2 large eggs

2 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking powder

½ tsp salt

1 tsp ground cinnamon

2 medium apples, peeled and diced (Honeycrisp or Granny Smith work well)

1/3 cup Macadamia nuts 

Instructions:

  1. Preheat oven – Heat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  2. Mix wet ingredients – In a large bowl, whisk melted butter and brown sugar until smooth. Add eggs and vanilla, whisking until fully incorporated.
  3. Mix dry ingredients – In another bowl, whisk together flour, baking powder, salt, and cinnamon.
  4. Combine & fold – Stir dry ingredients into wet mixture until just combined. Fold in diced apples and nuts.
  5. Bake – Spread batter evenly into the prepared pan. Bake 30–35 minutes, until golden and a toothpick comes out with moist crumbs (not wet batter).
