Chicken & Shrimp Skewers with Pineapple Coconut Rice

These Grilled Chicken & Shrimp Skewers with Coconut Pineapple Rice are a tropical-inspired weeknight dinner that comes together in under 30 minutes. Sweet pineapple, smoky grilled protein, and creamy coconut rice make this dish both easy and impressive.

Ingredients

  • Skewers (soaked in water prior to placing on the grill)
  • 5-7 chicken tenders
  • 18-20 x-large frozen raw shrimp (peeled prior to grilling)
  • 1 red pepper
  • 1-2 tablespoons of soy sauce (more if desired)
  • 1 tablespoon extra virgin olive oil
  • 3 scallions, sliced
  • 1-2 cups of fresh pineapple cut into 1″ chunks (save 3 chunks for the rice, use the rest for the skewers)
  • 2 bags of 90-second microwave coconut jasmine rice
  • Marinade Ingredients:
    • 1/4 cup extra virgin olive oil
    • 3 tablespoons lime juice (fresh preferred)
    • 2 tablespoons honey
    • 1 teaspoon sriracha
    • 1/2 teaspoon ground ginger
    • 2 cloves of minced garlic
    • 1 tablespoon soy sauce
    • 1/4 cup fresh cilantro, chopped
    • Salt/pepper to taste

Prep:

  • Soak the skewers in water prior to grilling
  • Thaw frozen shrimp and remove the shell
  • Cut the chicken into cubes
  • Combine oil, lime juice, honey, sriracha, ground ginger, garlic, soy sauce, cilantro, and salt/pepper. Place shrimp and chicken into the marinade. Let it set for a minimum of 15-minutes.

Wash and slice the red pepper into roughly 1″x1″ sections. After the chicken and shrimp have marinated, build your skewers by alternating the chicken, shrimp, red pepper, and pineapple.

Grill skewers on a pre-heated grill until chicken reaches an internal temperature of 165* (roughly 6-minutes per side). Remove from grill.

Cook the rice in the microwave according to the package. In a large skillet, add a the olive oil, sliced scallions, and diced reserved pieces (roughly 3) of pineapple. Cook for 2-3 minutes on medium heat. Add the cooked rice to the pan and stir to combine. Add soy sauce (start with 1 tablespoon and stir/taste. Add more if you desire a stronger flavor). Remove from heat.

Plate rice with grilled skewers. Pairs well with fresh cooked green beans! Garnish with extra cilantro and/or fresh lime wedges.
