Lemon dill grilled shrimp

A light and fresh dish that is perfect for summer dinners, backyard gatherings, or a quick weeknight meal.

ingredients

1 pound large shrimp, peeled and deveined

2 tbsp olive oil

Juice of 1 lemon

1 tsp lemon zest

2 tbsp fresh dill, finely chopped

2 garlic cloves, minced

1/2 tsp sea salt

1/4 tsp black pepper

directions

  1. Marinate the shrimp – in a medium bowl, combine olive oil, lemon juice, lemon zest, dill, garlic, salt and pepper. Add shrimp and toss to coat. Cover and refrigerate for 20-30 minutes.
  2. Grill – Preheat your grill (or grill pan) over medium-high heat. Thread shrimp onto skewers if desired. Grill 2-3 minutes per side, until opaque and lightly charred.
  3. Serve – Transfer to. platter, garnish with extra dill and lemon slices. Serve warm with a salad, grilled vegetables, or crusty bread.
