Maple Pecan Granola Clusters
Ingredients:
- 3 cups old-fashioned rolled oats
- 1 1/2 cups raw pecans (halved or chopped)
- 1/2 cup shredded unsweetened coconut
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup pure maple syrup
- 1/3 cup (melted) coconut oil
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
Directions:
- Preheat oven – Heat oven to 325*F. Line a large baking sheet with parchment paper.
- Mix dry ingredients – In a large bowl, combine oats, pecans, coconut, cinnamon, nutmeg, and salt.
- Mix wet ingredients – In a small bowl whisk together maple syrup, melted coconut oil, brown sugar, and vanilla extract
- Combine & coat – Pour wet mixture over dry mixture. Stir until everything is evenly coated.
- Bake – Spread the mixture on an even layer on the prepared baking sheet. Press down lightly with a spatula (helps forms clusters). Do not stir – that keeps the clusters intact.
- Cool completely – Remove from oven and let granola cool on the pan without touching. As it cools, it will crisp up and form large clusters.
- Store – Once cool, break into chunks and store in an airtight container for up to 2 weeks.
Eat plain or over yogurt. Enjoy!
