  • 1 1/2 cups raw pecans (halved or chopped)
  • 1/2 cup shredded unsweetened coconut
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup pure maple syrup
  • 1/3 cup (melted) coconut oil
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat oven – Heat oven to 325*F. Line a large baking sheet with parchment paper.
  2. Mix dry ingredients – In a large bowl, combine oats, pecans, coconut, cinnamon, nutmeg, and salt.
  3. Mix wet ingredients – In a small bowl whisk together maple syrup, melted coconut oil, brown sugar, and vanilla extract
  4. Combine & coat – Pour wet mixture over dry mixture. Stir until everything is evenly coated.
  5. Bake – Spread the mixture on an even layer on the prepared baking sheet. Press down lightly with a spatula (helps forms clusters). Do not stir – that keeps the clusters intact.
